What's the difference between kaomoji and emoji?

Kaomoji are built entirely from regular text characters (often Unicode symbols read upright rather than sideways, unlike Western ":)" style emoticons) — emoji are a separate, dedicated set of pictograph characters with their own Unicode block.

Will kaomoji display correctly everywhere?

Almost always — they're built from common Unicode characters, not images, so they work in any text field. A few use less common symbols that may render as a box on very old systems.
